Ingredients

- 1 cup ube (fresh or frozen)
- 3 cups all-purpose flour (or substitutions)
- 1 cup plant-based milk (almond, soy, or oat)
- 1/4 cup granulated sugar (or maple syrup/coconut sugar)
- 2 teaspoons active dry yeast
- 1/4 cup olive oil or vegan butter
- 1 teaspoon salt
Instructions
- In a small bowl, combine warm plant-based milk and sugar. Stir in the active dry yeast, and let it sit for 5-10 minutes until foamy.
- In a large mixing bowl, whisk together the flour and salt. Create a well in the center, add the foamy yeast mixture and ube, and pour in the oil or melted vegan butter.
- Mix until a dough forms, then knead for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough, shape it into rolls, and place them in a greased baking dish. Cover and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the rolls for about 25-30 minutes or until golden brown.
- Let the rolls cool for a few minutes before serving with vegan butter or jam.
Notes
Ensure yeast is fresh for the best rise. Use a warm place for dough to rise.
