- 1 onion, chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup shredded cabbage
- 1 cup snow peas
- 1 cup shiitake mushrooms, sliced (or button mushrooms/portobello)
- 3–4 tablespoons soy sauce (or to taste)
- Fresh herbs for garnish (cilantro and green onions)
Instructions
- Prepare the noodles according to package instructions. Drain and rinse with cold water. Set aside.
- Sauté the garlic and onion in a large skillet or wok with vegetable oil over medium heat until fragrant (about 2 minutes).
- Add the bell peppers, cabbage, and snow peas; stir-fry for 3-5 minutes until tender yet crisp.
- Mix in the cooked noodles and soy sauce, gently tossing everything together.
- Incorporate the shiitake mushrooms and stir for another 2 minutes until tender.
- Finish with fresh herbs as garnish before serving.
