Ingredients

- 2 cups heavy cream
- 1 cup milk
- 1/2 cup granulated sugar
- 2 teaspoons vanilla bean seeds
- 2 vanilla beans, split
- 2 1/2 teaspoons gelatin
- 2 tablespoons cold water
- Pinch of salt
Instructions
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for 5–10 minutes.
- In a saucepan over medium heat, combine heavy cream, milk, and sugar. Heat until warm, then add the split vanilla beans and stir. Remove from heat when it starts to bubble.
- Add the bloomed gelatin to the cream mixture while whisking until fully dissolved. Add a pinch of salt.
- Strain the mixture through a fine sieve into serving glasses or ramekins. Let cool at room temperature for 30 minutes, then refrigerate for at least 4 hours until set.
- Serve topped with berry sauce, fresh fruits, or nuts, if desired.

Ensure that the gelatin is fully dissolved for a smooth texture. Avoid overheating the cream mixture to prevent curdling.
