Ingredients

  • 2 cups heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla bean seeds
  • 2 vanilla beans, split
  • 2 1/2 teaspoons gelatin
  • 2 tablespoons cold water
  • Pinch of salt

Instructions

  1. In a small bowl, sprinkle the gelatin over cold water and let it bloom for 5–10 minutes.
  2. In a saucepan over medium heat, combine heavy cream, milk, and sugar. Heat until warm, then add the split vanilla beans and stir. Remove from heat when it starts to bubble.
  3. Add the bloomed gelatin to the cream mixture while whisking until fully dissolved. Add a pinch of salt.
  4. Strain the mixture through a fine sieve into serving glasses or ramekins. Let cool at room temperature for 30 minutes, then refrigerate for at least 4 hours until set.
  5. Serve topped with berry sauce, fresh fruits, or nuts, if desired.

Ensure that the gelatin is fully dissolved for a smooth texture. Avoid overheating the cream mixture to prevent curdling.
