Ingredients

  • 1 package cream cheese (softened)
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 vanilla bean (seeds scraped)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 1 tbsp sugar (for crust)
  • Heavy cream (for topping)
  • Granulated sugar (for caramelizing)

Instructions

  1. Preheat oven to 325°F (160°C). Line a cupcake pan with liners.
  2. In a mixing bowl, combine cream cheese and sugar. Beat until smooth and fluffy.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. Incorporate vanilla bean seeds and vanilla extract into the mixture.
  5. Gently mix in sour cream until well combined.
  6. In another bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of cupcake liners.
  7. Pour cheesecake mixture over the crust, filling each liner about ¾ full.
  8. Bake for 18-22 minutes until slightly jiggly in the center.
  9. Allow cooling at room temperature for 1 hour, then chill in the fridge for at least 4 hours (preferably overnight).
  10. Sprinkle a thin layer of sugar on top and caramelize using a kitchen torch or under broiler.
  11. Let cool before serving. Garnish with fresh berries or chocolate sauce.

Notes

Be careful not to overbake as this can lead to dryness. Always use real vanilla for better flavor.
