- 1 sheet puff pastry
- 1 cup fresh mushrooms, sliced (cremini or shiitake recommended)
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (thyme or rosemary)
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Prep the skillet: Preheat your oven to 400°F (200°C). Heat olive oil in an oven-safe skillet over medium heat and add minced garlic.
- Toss in sliced mushrooms and cherry tomatoes, cooking until they begin to soften and caramelize, about 5 minutes. Season with salt and pepper, add fresh herbs, and stir well.
- Allow the mixture to cool slightly before arranging it evenly in the bottom of the skillet.
- Roll out the puff pastry and place it over the sautéed vegetables, tucking in the edges.
- Pop the skillet in the oven and bake for 20–25 minutes, until the pastry is golden brown.
- Flip the skillet upside down on a large plate to serve the tarts beautifully.

Do not overfill the tart to prevent overflow while baking.
