Ingredients

  • 1 sheet puff pastry
  • 1 cup fresh mushrooms, sliced (cremini or shiitake recommended)
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (thyme or rosemary)
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep the skillet: Preheat your oven to 400°F (200°C). Heat olive oil in an oven-safe skillet over medium heat and add minced garlic.
  2. Toss in sliced mushrooms and cherry tomatoes, cooking until they begin to soften and caramelize, about 5 minutes. Season with salt and pepper, add fresh herbs, and stir well.
  3. Allow the mixture to cool slightly before arranging it evenly in the bottom of the skillet.
  4. Roll out the puff pastry and place it over the sautéed vegetables, tucking in the edges.
  5. Pop the skillet in the oven and bake for 20–25 minutes, until the pastry is golden brown.
  6. Flip the skillet upside down on a large plate to serve the tarts beautifully.

Notes

Do not overfill the tart to prevent overflow while baking.
