  • 3 carrots, chopped
  • 2 onions, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup dry red wine (like Cabernet Sauvignon)
  • 23 sprigs fresh thyme
  • 12 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • Oil, for searing

Instructions

  1. Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Pat the short ribs dry, season with salt and pepper, add oil, and sear the ribs on all sides until browned.
  2. Remove the ribs and add onions, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
  3. Add garlic and herbs, sauté for 1 minute, then deglaze the pot with red wine, scraping up any browned bits.
  4. Return the short ribs to the pot, pour in the beef broth, add bay leaves, and bring to a gentle simmer.
  5. Cover and cook on low for 2-3 hours, or until ribs are tender. Alternatively, transfer to a slow cooker for 6-8 hours.
  6. Adjust seasoning, remove bay leaves, and serve the stew warm with crusty bread or mashed potatoes.

Notes

For added depth, consider adding mushrooms during the last hour of cooking.
