Ingredients
- Tuscan kale (or Lacinato kale)
- Yukon Gold or Russet potatoes
- Cannellini or navy beans
- Fresh garlic
- Onions
- Vegetable or chicken broth
- Fresh thyme
- Fresh rosemary
- Bay leaves
- Olive oil
- Salt and pepper
- Red pepper flakes (optional)
Instructions
- In a large soup pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
- Toss in minced garlic and red pepper flakes (if using); sauté for an additional 30 seconds until fragrant.
- Stir in diced potatoes and cook for around 5 minutes.
- Pour in the broth and bring to a simmer.
- Add bay leaf, thyme, and rosemary. Let the soup simmer for about 15-20 minutes until potatoes are tender.
- Add drained beans and chopped kale, cooking for an additional 5-10 minutes.
- Taste and adjust seasoning, serve with a drizzle of olive oil and fresh herbs on top.
