Description

Ingredients

  • Tuscan kale (or Lacinato kale)
  • Yukon Gold or Russet potatoes
  • Cannellini or navy beans
  • Fresh garlic
  • Onions
  • Vegetable or chicken broth
  • Fresh thyme
  • Fresh rosemary
  • Bay leaves
  • Olive oil
  • Salt and pepper
  • Red pepper flakes (optional)

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  2. Toss in minced garlic and red pepper flakes (if using); sauté for an additional 30 seconds until fragrant.
  3. Stir in diced potatoes and cook for around 5 minutes.
  4. Pour in the broth and bring to a simmer.
  5. Add bay leaf, thyme, and rosemary. Let the soup simmer for about 15-20 minutes until potatoes are tender.
  6. Add drained beans and chopped kale, cooking for an additional 5-10 minutes.
  7. Taste and adjust seasoning, serve with a drizzle of olive oil and fresh herbs on top.
