- 2 cups fresh mushrooms (cremini or baby bella)

- 2 tablespoons olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes, then add chopped mushrooms and cook until tender and golden, roughly 5-7 minutes. Season with salt, pepper, and herbs.
- Flatten the chicken breasts between sheets of plastic wrap to about 1/2 inch thick.
- Spread the mushroom filling over the chicken, add cheese, and carefully roll tightly.
- Pan-sear the roulade in the skillet until golden brown, about 4-5 minutes.
- Transfer to the oven and bake for 20-25 minutes until chicken reaches 165°F (74°C).
- Let rest for 5 minutes, then slice and serve.
