- 3 cloves garlic, minced
- 1 onion, finely chopped
- 1 cup breadcrumbs
- 1 large egg
- 1 can (15 oz) pumpkin puree
- 1/4 cup fresh sage, chopped
- 2 cups chicken or vegetable stock
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, minced garlic, chopped onion, breadcrumbs, egg, and a good pinch of salt and pepper. Mix thoroughly with your hands until everything is evenly distributed.
- Shape the Meatballs: Wet your hands slightly to prevent sticking and roll the mixture into balls about 1 to 1.5 inches in diameter. Place them on a parchment-lined tray.
- Brown the Meatballs: In a large skillet over medium heat, add a splash of olive oil. Once hot, carefully add the meatballs in batches, ensuring not to overcrowd the pan. Sear them on all sides for about 8-10 minutes until browned. Remove them from the skillet and set aside.
- Prepare the Pumpkin Sage Sauce: In the same skillet, add more olive oil if needed, and sauté chopped onions and garlic until softened and fragrant. Stir in the pumpkin puree, cooking it gently for a couple of minutes.
- Combine and Simmer: Pour in the stock, stirring until fully combined. Add the sage and season with salt and pepper. Return the browned meatballs to the skillet, cover, and let them simmer for about 20 minutes, occasionally stirring gently.
- Serve: Serve the Turkey Meatballs in Pumpkin Sage Sauce over a bed of creamy polenta, pasta, or rice, and garnish with additional fresh sage leaves for that aromatic touch.
Notes
Cooking the meatballs in batches helps maintain temperature for even browning. Don’t rush the simmering process for the sauce to let the flavors develop.
