Ingredients

Scale
  • 4 large potatoes (Russets or Yukon Gold)
  • 2 cans of tuna (preferably in water)
  • 1 sweet onion (or yellow onion)
  • 4 tablespoons butter
  • 1/2 cup whole milk (or heavy cream)
  • 1 tablespoon fresh parsley (minced)
  • 1 tablespoon fresh thyme (minced)

  2. Peel and chop the potatoes into equal-sized pieces, then boil in salted water until fork-tender, about 15 minutes.
  3. In a skillet, melt 2 tablespoons of butter over medium heat and sauté diced onions until softened and golden, about 5-7 minutes.
  4. In a large bowl, combine drained tuna, sautéed onions, boiled potatoes, and a splash of milk or cream. Stir in minced herbs, salt, and pepper.
  5. Pour the mixture into a greased baking dish, smooth the top, and sprinkle cheese if desired.
  6. Bake for 25-30 minutes until the top is golden and bubbly.
  7. Let it sit for a few minutes before serving.

Notes

Taste as you go for seasoning and adjust as necessary. Keep an eye on baking time and cover with foil if browning too quickly.
