Ingredients

- 1 can of quality tuna, drained
- 2 eggs
- 1 cup breadcrumbs (panko or regular)
- 1 onion, chopped
- 1/4 cup fresh parsley or dill, chopped
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Olive oil, for frying
Instructions
- Drain the canned tuna thoroughly.
- In a large bowl, combine drained tuna, eggs, breadcrumbs, chopped onions, herbs, and spices.
- Mix until well incorporated.
- Form the mixture into palm-sized patties.
- Heat olive oil in a skillet over medium heat until hot.
- Cook patties for 3-4 minutes on each side until golden brown.
- Remove from skillet and let drain on paper towels. Serve warm with a squeeze of lemon.
Notes
For extra crispiness, double-dip in breadcrumbs before frying, or bake at 375°F until golden-brown.
