Instructions

  1. Prepare the Rub: In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, and salt. Mix well.
  2. Season the Pork: Coat the pork shoulder generously with the rub. Let it rest for 30 minutes to 1 hour.
  3. Preheat the Traeger: Set the Traeger grill to 225°F.
  4. Cook Low and Slow: Place the pork shoulder on the grill and monitor the internal temperature until it reaches 195°F to 205°F (about 8-12 hours).
  5. Wrap It Up: Wrap the pork in butcher paper when it hits 160°F.
  6. Rest Before Shredding: Allow the pork to rest for at least 30 minutes.
  7. Shred and Serve: Use two forks to shred the pork and serve as desired.
