Ingredients
- Fresh tomatoes (about 2 lbs, or use canned tomatoes if fresh aren’t available)
- Fresh basil (1 cup, packed)
- Garlic (3 cloves, minced)
- Vegetable or chicken broth (4 cups)
- Onion (1 medium, diced)
- Olive oil (2 tablespoons)
- Cream (optional, 1/2 cup)
Instructions
- Start by washing and dicing your fresh tomatoes. If using canned tomatoes, ensure they are whole and drain excess juice.
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion turns translucent, about 5 minutes.
- Introduce the tomatoes to the pot and let them simmer for about 10 minutes.
- Pour in your choice of broth and toss in the fresh basil. Bring to a gentle boil, then reduce to a simmer for another 15-20 minutes.
- Using an immersion blender, purée the soup until creamy. For a chunky texture, blend partially.
- Taste and adjust seasoning with salt, pepper, and add balsamic vinegar if desired.
- If using cream, stir it in just before serving.
- Ladle the soup into bowls, drizzling olive oil on top and garnishing with more basil.
