- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 2 tbsp espresso powder
- ½ cup cocoa powder, unsweetened
- ½ tsp salt
- 1 cup chocolate chips or chunks
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy (about 3-5 minutes).
- Add eggs one at a time, mixing in the vanilla extract until combined.
- In another bowl, whisk together flour, espresso powder, cocoa powder, and salt. Gradually add this mixture to the wet ingredients, stir gently until just combined.
- Fold in chocolate chips or chunks until evenly distributed.
- Drop spoonfuls of dough onto a lined baking sheet, leaving space between each scoop.
- Bake for 10-12 minutes until edges are set but centers remain soft.
- Let cool on baking sheet for a few minutes then transfer to a wire rack to cool completely.
Notes
For chewier cookies, bake until edges are golden, but the center looks slightly underbaked. Chilling the dough helps maintain the shape while baking.
