Instructions

  1. Preheat your oven to 425°F (220°C). Chop all your vegetables and herbs.
  2. Spread chopped root vegetables on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for about 25-30 minutes until golden and tender, stirring halfway through.
  3. In a skillet, melt butter or heat olive oil. Add finely chopped garlic and sliced mushrooms, cooking until tender and browned (about 5-7 minutes).
  4. If using turkey, roast it according to your favorite recipe, or sauté your chosen plant-based protein in the same skillet for added flavor.

  6. Assemble the bowl starting with a layer of creamy mashed potatoes, followed by roasted vegetables, sautéed mushrooms, and turkey or plant-based protein. Top with cranberries and fresh herbs.

Notes
