- 1 cup red lentils
- 1 can coconut milk
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 1 bell pepper, chopped
- 4 cups vegetable or chicken broth
- 1 lime, juiced
- Fresh cilantro, for garnish
- Fresh Thai basil, for garnish
- Chili, to taste
- Salt and pepper, to taste
- 1 tablespoon oil
Instructions
- Heat a tablespoon of oil in a large pot over medium heat. Add chopped onions, carrots, and bell peppers; sauté until softened, about 5-7 minutes.
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Pour in the red lentils, coconut milk, and broth. Stir to combine and bring to a gentle simmer.
- Allow the soup to simmer for 20-25 minutes, until the lentils are tender and the soup has thickened slightly. Stir occasionally and add water if it gets too thick.
- Season to taste with lime juice, salt, and pepper. Add chili according to your spice preference.
- Garnish with fresh cilantro and Thai basil just before serving.
Notes
Let the soup cool completely before storing in airtight containers for leftovers. Freezes well for up to 3 months.
