Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable or chicken broth
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Fresh Thai basil, for garnish
  • Chili, to taste
  • Salt and pepper, to taste
  • 1 tablespoon oil

Instructions

  1. Heat a tablespoon of oil in a large pot over medium heat. Add chopped onions, carrots, and bell peppers; sauté until softened, about 5-7 minutes.
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Pour in the red lentils, coconut milk, and broth. Stir to combine and bring to a gentle simmer.
  4. Allow the soup to simmer for 20-25 minutes, until the lentils are tender and the soup has thickened slightly. Stir occasionally and add water if it gets too thick.
  5. Season to taste with lime juice, salt, and pepper. Add chili according to your spice preference.
  6. Garnish with fresh cilantro and Thai basil just before serving.

Notes

Let the soup cool completely before storing in airtight containers for leftovers. Freezes well for up to 3 months.
