- 1 lb ground beef or turkey
- 1 cup cornmeal
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 eggs
- 1 cup milk
- 1/4 cup melted butter
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp baking powder
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté for about 5 minutes until soft.
- Increase the heat and add the ground meat. Cook until browned, then season with chili powder, cumin, garlic powder, and salt. Stir in canned tomatoes and simmer for about 10 minutes.
- In a mixing bowl, combine cornmeal, baking powder, eggs, milk, and melted butter. Mix until just combined.
- In a greased baking dish, layer the meat mixture first, then pour the cornbread batter on top and spread evenly.
- Top with a generous amount of cheese.
- Bake for 25-30 minutes until the top is golden and set.
- Let cool for a few minutes before serving. Garnish with fresh cilantro, avocado, or sour cream if desired.
