  • 2 tbsp brown sugar
  • 2 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch (optional, to thicken sauce)
  • Vegetable skewers (bell peppers, onions, cherry tomatoes, optional)

Instructions

  1. In a bowl, whisk together soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil to create the marinade.
  2. Cut the chicken into bite-sized pieces and marinate for at least 30 minutes (up to overnight).
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken and vegetables onto the skewers, alternating for a colorful presentation.
  5. Preheat the grill or skillet over medium-high heat and lightly oil it.
  6. Cook the skewers for 10-15 minutes, turning occasionally, and brush with extra marinade for glazing.
  7. Ensure the chicken reaches an internal temperature of 165°F (75°C).
  8. Let the skewers rest for a few minutes before serving.
