- 1 lb boneless chicken (breast or thighs), cut into bite-sized pieces
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp brown sugar
- 2 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1 tbsp sesame oil
- 1 tbsp cornstarch (optional, to thicken sauce)
- Vegetable skewers (bell peppers, onions, cherry tomatoes, optional)
Instructions
- In a bowl, whisk together soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil to create the marinade.
- Cut the chicken into bite-sized pieces and marinate for at least 30 minutes (up to overnight).
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken and vegetables onto the skewers, alternating for a colorful presentation.
- Preheat the grill or skillet over medium-high heat and lightly oil it.
- Cook the skewers for 10-15 minutes, turning occasionally, and brush with extra marinade for glazing.
- Ensure the chicken reaches an internal temperature of 165°F (75°C).
- Let the skewers rest for a few minutes before serving.
Notes
Reserve some marinade before adding the chicken to use for basting while cooking. Avoid overcrowding the skewers for even cooking.
