- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn
- 4 cups beef or vegetable broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp taco seasoning
- Fresh cilantro, for garnish
- 1 avocado, diced
- Sour cream, for garnish
- Shredded cheese, for garnish
Instructions
- Brown the ground meat in a large pot over medium heat. Drain excess fat.
- Add chopped onions, bell peppers, and minced garlic. Sauté until fragrant, about 5 minutes.
- Stir in taco seasoning and cook for another minute.
- Add diced tomatoes, beans, corn, and broth. Mix well and bring to a gentle boil.
- Reduce heat and let simmer for 20-30 minutes.
- Taste and adjust seasoning as needed.
- Serve hot with garnishes such as cilantro, avocado, sour cream, and cheese.
