Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn
  • 4 cups beef or vegetable broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • Fresh cilantro, for garnish
  • 1 avocado, diced
  • Sour cream, for garnish
  • Shredded cheese, for garnish

Instructions

  1. Brown the ground meat in a large pot over medium heat. Drain excess fat.
  2. Add chopped onions, bell peppers, and minced garlic. Sauté until fragrant, about 5 minutes.
  3. Stir in taco seasoning and cook for another minute.
  4. Add diced tomatoes, beans, corn, and broth. Mix well and bring to a gentle boil.
  5. Reduce heat and let simmer for 20-30 minutes.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with garnishes such as cilantro, avocado, sour cream, and cheese.
