Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs, one at a time, and mix in vanilla extract.
- In a separate bowl, combine flour, baking powder, and salt; gradually mix into the wet ingredients until just combined.
- Divide the dough in half; blend food coloring and peppermint extract into one half.
- Spoon alternating doughs onto the baking sheet and swirl gently.
- Bake for 10-12 minutes until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
For a dairy-free option, replace butter with coconut oil. Chill the dough for easier handling if it’s too soft.
