- 2 pounds sweet potatoes
- 2–3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- Salt, to taste
- Pepper, to taste
- Fresh herbs (like cilantro or parsley), for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash sweet potatoes thoroughly and poke holes with a fork.
- Wrap each potato in aluminum foil and place on a baking sheet. Roast for 45-60 minutes, until tender.
- Unwrap the potatoes and let them cool for a few moments.
- Gently smash each sweet potato on a large baking dish.
- Drizzle olive oil over the smashed potatoes and sprinkle with garlic, chili powder, cayenne, salt, and pepper. Toss gently.
- Return potatoes to the oven and bake for another 15-20 minutes until crispy and golden.
- Remove from oven, cool slightly, and garnish with fresh herbs.
Notes
For added flavor, consider a sprinkle of lime juice before serving.
