  • 23 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (like cilantro or parsley), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash sweet potatoes thoroughly and poke holes with a fork.
  3. Wrap each potato in aluminum foil and place on a baking sheet. Roast for 45-60 minutes, until tender.
  4. Unwrap the potatoes and let them cool for a few moments.
  5. Gently smash each sweet potato on a large baking dish.
  6. Drizzle olive oil over the smashed potatoes and sprinkle with garlic, chili powder, cayenne, salt, and pepper. Toss gently.
  7. Return potatoes to the oven and bake for another 15-20 minutes until crispy and golden.
