  • 1/4 Red Onion, diced

  • 2 tablespoons Apple Cider Vinegar
  • Salt and Pepper to taste
  • Fresh Thyme or Parsley, for garnish
  • Optional: Chopped pecans or walnuts

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper, then spread in a single layer on a baking sheet.
  3. Roast for 25-30 minutes until tender and caramelized.
  4. If using fresh cranberries, rinse and remove stems; for dried cranberries, soak in warm water for 10 minutes.
  5. In a large bowl, combine roasted sweet potatoes, cranberries, red onion, and goat cheese.
  6. Drizzle with olive oil and vinegar, add fresh herbs, and toss gently.
  7. Allow the salad to sit at room temperature for 15 minutes before serving.
  8. Serve warm, at room temperature, or chilled.
