  • 3 medium sweet potatoes, sliced into 1/2 inch rounds
  • 8 oz Brie cheese, sliced
  • 1/2 cup cranberry sauce
  • 1/2 cup pecans, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional), such as rosemary or thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by washing and slicing them into rounds.
  3. Roast the sweet potato rounds on a baking sheet, drizzle with olive oil, and season with salt and pepper. Cook for 20-25 minutes, flipping halfway.
  4. Add Brie slices on top of each roasted sweet potato round and return to the oven for 5-8 minutes until bubbling.
  5. Top the rounds with a dollop of cranberry sauce and sprinkle with toasted pecans.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

For a dairy-free option, substitute Brie with goat cheese or a soft vegan cheese. Use walnuts or hazelnuts as alternatives to pecans.
