- 3 medium sweet potatoes, sliced into 1/2 inch rounds
- 8 oz Brie cheese, sliced
- 1/2 cup cranberry sauce
- 1/2 cup pecans, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (optional), such as rosemary or thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the sweet potatoes by washing and slicing them into rounds.
- Roast the sweet potato rounds on a baking sheet, drizzle with olive oil, and season with salt and pepper. Cook for 20-25 minutes, flipping halfway.
- Add Brie slices on top of each roasted sweet potato round and return to the oven for 5-8 minutes until bubbling.
- Top the rounds with a dollop of cranberry sauce and sprinkle with toasted pecans.
- Serve warm, garnished with fresh herbs if desired.
Notes
For a dairy-free option, substitute Brie with goat cheese or a soft vegan cheese. Use walnuts or hazelnuts as alternatives to pecans.
