- 2 cups mashed sweet potatoes
- 1/2 cup unsalted butter, melted (or coconut oil for dairy-free)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar (or coconut sugar)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 1/2 cups all-purpose flour (or almond flour for gluten-free)
- 1/4 cup sugar (for crust)
- 1/4 tsp salt
- Cold water as needed
Instructions
- Prepare the Sweet Potatoes: Peel and chop sweet potatoes. Steam or boil until fork-tender, about 15-20 minutes. Drain and let cool, then mash until smooth.
- Make the Crust: In a bowl, combine flour, sugar, and salt. Cut in melted butter until coarse crumbs form. Add cold water, one tablespoon at a time, until dough forms. Roll out and fit into a baking pan, pricking with a fork.
- Pre-bake the Crust: Bake at 350°F (175°C) for 10-12 minutes until lightly golden.
- Prepare the Filling: In a large bowl, mix mashed sweet potatoes, sugars, eggs, melted butter, vanilla, cinnamon, nutmeg, and ginger until smooth.
- Assemble and Bake: Pour the filling over the pre-baked crust and bake for 25-30 minutes until filling is set.
- Cool and Serve: Allow to cool completely before slicing. Serve with whipped cream or ice cream if desired.
Notes
For a gluten-free option, substitute almond flour for the crust. You can freeze leftover bars for up to 3 months.
