  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 1/2 cups all-purpose flour (or almond flour for gluten-free)
  • 1/4 cup sugar (for crust)
  • 1/4 tsp salt
  • Cold water as needed

Instructions

  1. Prepare the Sweet Potatoes: Peel and chop sweet potatoes. Steam or boil until fork-tender, about 15-20 minutes. Drain and let cool, then mash until smooth.
  2. Make the Crust: In a bowl, combine flour, sugar, and salt. Cut in melted butter until coarse crumbs form. Add cold water, one tablespoon at a time, until dough forms. Roll out and fit into a baking pan, pricking with a fork.
  3. Pre-bake the Crust: Bake at 350°F (175°C) for 10-12 minutes until lightly golden.
  4. Prepare the Filling: In a large bowl, mix mashed sweet potatoes, sugars, eggs, melted butter, vanilla, cinnamon, nutmeg, and ginger until smooth.
  5. Assemble and Bake: Pour the filling over the pre-baked crust and bake for 25-30 minutes until filling is set.
  6. Cool and Serve: Allow to cool completely before slicing. Serve with whipped cream or ice cream if desired.

Notes
