Description

Deliciously fluffy Sweet Potato Pancakes infused with warm spices, perfect for breakfast, brunch or dinner.


Ingredients

  • 2 medium sweet potatoes, roasted or steamed
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 cup buttermilk (or regular milk)
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 tbsp unsalted butter (or coconut oil) for cooking

Instructions

  1. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  2. If not already done, roast or steam sweet potatoes until soft, then mash until smooth.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, mix the mashed sweet potatoes, buttermilk, eggs, and melted butter until well blended.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes. Flip and cook until golden brown.
  7. Keep pancakes warm in a low oven while finishing the batch. Serve with maple syrup, powdered sugar, or fresh fruit.

Notes

Keep the skillet at medium heat for even cooking. Customize with mix-ins like blueberries or nuts for added flavor.
