Description

A comforting Sweet Potato Cranberry Gratin that balances sweet and tart flavors, perfect for family gatherings and holiday dinners.


Ingredients

  • 2 large sweet potatoes, peeled and thinly sliced
  • 2 cups fresh cranberries
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1 cup grated cheddar or Gruyère cheese
  • 2 teaspoons fresh thyme or rosemary
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds, ideally about 1/8-inch thick.
  3. In a large bowl, toss the sweet potato slices with salt, pepper, and nutmeg. Add in the cranberries.
  4. In a saucepan, melt the butter over medium heat and add the cream, bringing it to a simmer.
  5. Layer half of the sweet potato mixture in a greased baking dish, pouring half of the cream mixture over it with a sprinkling of cheese.
  6. Repeat the layering with the remaining ingredients.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 25-30 minutes until golden and tender.
  8. Let it sit for 10 minutes before serving.

Notes

For an extra crispy top, broil for the last couple of minutes. Use a mandoline for even slicing.
