A comforting Sweet Potato Cranberry Gratin that balances sweet and tart flavors, perfect for family gatherings and holiday dinners.

- 2 large sweet potatoes, peeled and thinly sliced
- 2 cups fresh cranberries
- 4 tablespoons butter
- 1 cup heavy cream
- 1 cup grated cheddar or Gruyère cheese
- 2 teaspoons fresh thyme or rosemary
- Salt and pepper to taste
- Pinch of nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and slice the sweet potatoes into thin rounds, ideally about 1/8-inch thick.
- In a large bowl, toss the sweet potato slices with salt, pepper, and nutmeg. Add in the cranberries.
- In a saucepan, melt the butter over medium heat and add the cream, bringing it to a simmer.
- Layer half of the sweet potato mixture in a greased baking dish, pouring half of the cream mixture over it with a sprinkling of cheese.
- Repeat the layering with the remaining ingredients.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 25-30 minutes until golden and tender.
- Let it sit for 10 minutes before serving.
Notes
For an extra crispy top, broil for the last couple of minutes. Use a mandoline for even slicing.
