  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar
  • Fresh herbs (cilantro and Thai basil)
  • Chilies (fresh or dried)
  • Juice of 1 lime
  • Oil for sautéing
  • Optional: Vegetables like zucchini or snap peas

Instructions

  1. Chop the chicken into bite-sized pieces and mince garlic and ginger.
  2. In a small bowl, whisk together soy sauce, coconut milk, brown sugar, fish sauce, and red pepper flakes. Set aside.
  3. Heat oil in a skillet over medium-high heat, add chicken, and sauté until golden brown (6-7 minutes).
  4. Add garlic and ginger to the skillet and stir until fragrant (about 1 minute).
  5. Pour the sauce over the chicken, reduce heat, and let it simmer for 5-10 minutes to thicken.
  6. Before serving, stir in freshly chopped herbs and a squeeze of lime juice. Serve over jasmine rice.

Notes

Adjust the spice level to your preference. Add crushed peanuts or a splash of lime before serving for extra flavor.
