- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 3 tbsp soy sauce
- 1 tbsp fish sauce
- 2 tbsp brown sugar
- Fresh herbs (cilantro and Thai basil)
- Chilies (fresh or dried)
- Juice of 1 lime
- Oil for sautéing
- Optional: Vegetables like zucchini or snap peas
Instructions
- Chop the chicken into bite-sized pieces and mince garlic and ginger.
- In a small bowl, whisk together soy sauce, coconut milk, brown sugar, fish sauce, and red pepper flakes. Set aside.
- Heat oil in a skillet over medium-high heat, add chicken, and sauté until golden brown (6-7 minutes).
- Add garlic and ginger to the skillet and stir until fragrant (about 1 minute).
- Pour the sauce over the chicken, reduce heat, and let it simmer for 5-10 minutes to thicken.
- Before serving, stir in freshly chopped herbs and a squeeze of lime juice. Serve over jasmine rice.
Notes
Adjust the spice level to your preference. Add crushed peanuts or a splash of lime before serving for extra flavor.
