  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Zest of 1 lemon
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Prepare the apples by peeling, coring, and slicing them thinly. Toss the slices with lemon juice to prevent browning.
  3. Cream together the butter and sugars until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Sift in flour, baking powder, cinnamon, nutmeg, and a pinch of salt. Mix until just combined.
  6. Fold in the apples and lemon zest gently.
  7. Transfer the batter into the prepared pan, smoothing the top.
  8. Bake for 40-45 minutes, until golden and a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For extra flavor, you can add nuts or oats on top before baking. Serve warm with ice cream or whipped cream.
