- 2 cups cooked chicken, shredded
- 1 cup elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup breadcrumbs (panko preferred)
- 1 teaspoon parsley, chopped (or thyme)
- Salt and pepper to taste
- 1/2 teaspoon paprika (optional)
Instructions
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large skillet over medium heat, melt the butter and add minced garlic. Sauté until fragrant, about 1 minute.
- Add the heavy cream and bring to a gentle simmer, then stir in the cheddar and mozzarella until melted and creamy.
- Add the cooked chicken and drained macaroni into the cheese sauce. Stir until well combined.
- Season the mixture with salt, pepper, and herbs.
- Form small balls using a spoon, about the size of a golf ball, and place them on a parchment-lined baking sheet.
- Coat each ball in a breadcrumb mixture by tossing them in breadcrumbs with melted butter or olive oil.
- Preheat the oven to 375°F (190°C) and bake the bites for about 15-20 minutes or until golden brown.
- Allow to cool slightly before serving with your favorite dipping sauces.
Notes
Feel free to substitute cooked chicken with turkey or tofu for a vegetarian version. Adjust the seasonings to your taste preferences.
