- 4 boneless chicken breasts
- 1 cup sundried tomatoes (packed in oil), chopped
- 2 cups fresh spinach
- 4 oz cream cheese
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
- Herbs (like basil or Italian seasoning), to taste
Instructions
- Preheat oven to 375°F (190°C). Butterfly the chicken breasts and season with salt and pepper.
- In a skillet, heat olive oil over medium heat, add garlic, and sauté for 30 seconds.
- Add spinach and sauté until wilted, then remove from heat.
- Mix sautéed spinach, chopped sundried tomatoes, and cream cheese in a bowl. Stir in half of the Parmesan cheese.
- Stuff the chicken breasts with the filling and secure with toothpicks or kitchen twine.
- In the same skillet, sear the chicken for about 2-3 minutes on each side until golden brown.
- Transfer chicken to a baking dish, sprinkle with remaining Parmesan, and bake for 25-30 minutes until cooked through.
- Let rest for 5 minutes before serving.
Notes
For added flavor, consider adding sautéed mushrooms or swapping in ricotta for cream cheese.
