  • 4 boneless chicken breasts
  • 1 cup sundried tomatoes (packed in oil), chopped
  • 2 cups fresh spinach
  • 4 oz cream cheese
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Herbs (like basil or Italian seasoning), to taste

Instructions

  1. Preheat oven to 375°F (190°C). Butterfly the chicken breasts and season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat, add garlic, and sauté for 30 seconds.
  3. Add spinach and sauté until wilted, then remove from heat.
  4. Mix sautéed spinach, chopped sundried tomatoes, and cream cheese in a bowl. Stir in half of the Parmesan cheese.
  5. Stuff the chicken breasts with the filling and secure with toothpicks or kitchen twine.
  6. In the same skillet, sear the chicken for about 2-3 minutes on each side until golden brown.
  7. Transfer chicken to a baking dish, sprinkle with remaining Parmesan, and bake for 25-30 minutes until cooked through.
  8. Let rest for 5 minutes before serving.

Notes

For added flavor, consider adding sautéed mushrooms or swapping in ricotta for cream cheese.
