- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp pure vanilla extract
- 1 package sugar cookie dough
- 2 large eggs
- 2 tbsp flour
Instructions
- Preheat your oven to 350°F (175°C). Press the sugar cookie dough evenly into the bottom and up the sides of a greased 9-inch springform pan. Bake for 10-12 minutes, until edges are golden. Allow to cool completely.
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Add the sour cream, vanilla, and eggs one at a time, mixing well after each addition.
- Pour the cheesecake filling into the cooled crust and gently shake to release air bubbles.
- Place the springform pan on a baking sheet and bake at 325°F (163°C) for 55-65 minutes, until edges are set with a slight jiggle in the center.
- Turn off the oven, crack the door, and let cheesecake cool in the oven for one hour. Transfer to the refrigerator and chill for at least 4 hours or overnight.
- Run a knife around the edge of the pan to loosen and release the springform. Slice and serve with whipped cream, sprinkles, or fruit.

Ensure the cream cheese is at room temperature for a smooth filling. Allow the cheesecake to cool slowly to prevent cracking.
