  • 2 tsp Fresh Thyme, chopped (or 1 tsp dried)
  • 1 cup Chicken or Vegetable Broth
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive Oil or Butter

Instructions

  1. Prepare the Pork: Pat the pork roast dry with paper towels and rub generously with salt and pepper.
  2. Sear the Roast: Heat olive oil or butter in a pot over medium-high heat and sear the roast on all sides until golden brown, about 3-4 minutes per side.
  3. Sauté Onions and Garlic: Remove the roast and cook sliced onions in the same pot until soft, then add minced garlic and sauté for an additional minute.
  4. Deglaze the Pot: Pour in apple cider, scraping up the brown bits from the bottom.
  5. Create the Braising Liquid: Add broth and return the roast to the pot, nestling fresh herbs around it.
  6. Roast in the Oven: Cover and place in a preheated oven at 325°F (163°C) for 2 to 2.5 hours, basting occasionally.
  7. Rest and Serve: Let it rest for at least 15 minutes before slicing and serving.
