- 3–4 lbs Pork Roast (Shoulder or Loin)
- 2 cups Apple Cider
- 2 large Onions, sliced
- 4 cloves Garlic, minced
- 2 tsp Fresh Rosemary, chopped (or 1 tsp dried)
- 2 tsp Fresh Thyme, chopped (or 1 tsp dried)
- 1 cup Chicken or Vegetable Broth
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive Oil or Butter
Instructions
- Prepare the Pork: Pat the pork roast dry with paper towels and rub generously with salt and pepper.
- Sear the Roast: Heat olive oil or butter in a pot over medium-high heat and sear the roast on all sides until golden brown, about 3-4 minutes per side.
- Sauté Onions and Garlic: Remove the roast and cook sliced onions in the same pot until soft, then add minced garlic and sauté for an additional minute.
- Deglaze the Pot: Pour in apple cider, scraping up the brown bits from the bottom.
- Create the Braising Liquid: Add broth and return the roast to the pot, nestling fresh herbs around it.
- Roast in the Oven: Cover and place in a preheated oven at 325°F (163°C) for 2 to 2.5 hours, basting occasionally.
- Rest and Serve: Let it rest for at least 15 minutes before slicing and serving.
Notes
Consider adding root vegetables around the roast for extra flavor.
