- 2 cups apple cider
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped

- Apple slices (optional)
- 2 tbsp vinegar (apple cider or balsamic)
- Salt and pepper, to taste
- Olive oil, for searing
Instructions
- Prep the pork: Pat your pork shoulder dry with paper towels and season generously with salt and pepper. Rub minced garlic all over the meat.
- Sear the meat: In a heavy, oven-safe skillet or Dutch oven, heat a drizzle of olive oil over medium-high heat. Once hot, add the pork and sear on all sides until nicely browned—about 4-5 minutes per side.
- Add aromatics: Remove the pork momentarily and add chopped onions to the pan. Sauté until softened and translucent, adding a little more oil if necessary.
- Craft the sauce: Pour the apple cider into the pan, scraping any brown bits off the bottom. This step is crucial for flavor!
- Herbs and broth: Return the pork to the pan, pour in chicken broth, and sprinkle your herbs all around.
- Roast away: Cover the skillet with a lid or foil and transfer it to a preheated oven at 300°F. Roast for about 180 minutes or until fork-tender.
- Finish and serve: For the last 30 minutes, uncover the pork so the top can caramelize. If desired, add apple slices during this final phase.

For the best texture, let the meat rest for at least 15 minutes before slicing.
