Description

A comforting and elegant dish featuring boneless chicken breasts filled with sautéed mushrooms, creamy spinach, and cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mushrooms (cremini or button), chopped
  • 2 cups fresh spinach (or thawed frozen spinach)
  • 1/2 cup mozzarella or goat cheese, shredded
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (thyme or basil), chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
  2. Add chopped mushrooms and cook until tender and brown.
  3. Stir in spinach and cook until wilted. Season with salt, pepper, and herbs.
  4. Remove from heat and mix in cheese. Set aside to cool.
  5. Using a sharp knife, create a pocket in each chicken breast, being careful not to cut all the way through.
  6. Spoon the filling into each chicken breast pocket. Secure with toothpicks if necessary.
  7. In a skillet, heat olive oil on medium heat. Cook stuffed chicken breasts for 5-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  8. Let the chicken rest for a few minutes before serving. Enjoy with favorite sides.

Notes

Let the chicken rest after cooking to keep it juicy. Don’t overstuff the chicken to avoid tearing.
