- 4 boneless, skinless chicken breasts
- 1 cup fresh mushrooms (cremini or button), chopped
- 2 cups fresh spinach (or thawed frozen spinach)
- 1/2 cup mozzarella or goat cheese, shredded
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (thyme or basil), chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
- Add chopped mushrooms and cook until tender and brown.
- Stir in spinach and cook until wilted. Season with salt, pepper, and herbs.
- Remove from heat and mix in cheese. Set aside to cool.
- Using a sharp knife, create a pocket in each chicken breast, being careful not to cut all the way through.
- Spoon the filling into each chicken breast pocket. Secure with toothpicks if necessary.
- In a skillet, heat olive oil on medium heat. Cook stuffed chicken breasts for 5-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before serving. Enjoy with favorite sides.
Notes
Let the chicken rest after cooking to keep it juicy. Don’t overstuff the chicken to avoid tearing.
