- 4 medium zucchinis
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 lb ground turkey (or substitute with beans for vegetarian option)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh herbs (basil, parsley, or oregano)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers to create boats.
- In a skillet, heat olive oil and sauté onions and garlic until fragrant.
- If using ground meat, add it to the skillet and cook until browned.
- Mix in spices and herbs, then stir in cheeses after removing from heat.
- Fill the zucchini boats with the cheesy mixture and place in a baking dish lined with tomato sauce.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes.
- Serve warm, garnished with fresh herbs.
