  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 lb ground turkey (or substitute with beans for vegetarian option)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh herbs (basil, parsley, or oregano)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers to create boats.
  3. In a skillet, heat olive oil and sauté onions and garlic until fragrant.
  4. If using ground meat, add it to the skillet and cook until browned.
  5. Mix in spices and herbs, then stir in cheeses after removing from heat.
  6. Fill the zucchini boats with the cheesy mixture and place in a baking dish lined with tomato sauce.
