Instructions
- Prepare the strawberries: Wash, hull, and dice the strawberries into small chunks. Optionally, sprinkle a little sugar to enhance their sweetness.
- Cream the butter and sugar: In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy (about 3-4 minutes).
- Add vanilla and matcha: Mix in the vanilla extract and matcha powder until well combined.
- Mix in dry ingredients: Gradually add the flour, mixing until just combined.
- Fold in strawberries: Gently fold in the diced strawberries without crushing them.
- Chill the dough: Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice and bake: Remove the dough, slice into rounds, and bake for 12-15 minutes until edges are lightly golden.
- Cool and enjoy: Allow the cookies to cool before transferring to a wire rack.
