- 16 oz cream cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 2 tbsp matcha powder
- 2 cups fresh strawberries, sliced
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 325°F (163°C).
- Combine crushed graham crackers with melted butter and sugar, press into a springform pan, and bake for 10 minutes.
- Beat cream cheese and sugar until smooth, then mix in eggs one at a time, followed by heavy cream and matcha powder.
- Pour half the cheesecake batter over the crust, add sliced strawberries, and top with remaining batter.
- Bake for 45-50 minutes until edges are set but center jiggles slightly.
- Cool in the oven with the door cracked, then refrigerate for at least 4 hours.
- Top with remaining strawberries before serving.
Notes
For a vegan version, substitute cream cheese with dairy-free cream cheese and use coconut cream instead of heavy cream.
