Ingredients

  • 16 oz cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tbsp matcha powder
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine crushed graham crackers with melted butter and sugar, press into a springform pan, and bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth, then mix in eggs one at a time, followed by heavy cream and matcha powder.
  4. Pour half the cheesecake batter over the crust, add sliced strawberries, and top with remaining batter.
  5. Bake for 45-50 minutes until edges are set but center jiggles slightly.
  6. Cool in the oven with the door cracked, then refrigerate for at least 4 hours.
  7. Top with remaining strawberries before serving.

Notes

For a vegan version, substitute cream cheese with dairy-free cream cheese and use coconut cream instead of heavy cream.
