- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 1/2 cups all-purpose flour (or whole wheat flour)
- 1 cup rolled oats
- 1/2 cup unsalted butter, chilled and diced
- 1 large egg
- 1 teaspoon baking powder
- Zest of 1 lemon
Instructions
- Prepare the strawberries by rinsing, hulling, and chopping them into bite-sized pieces. Combine with sugar and lemon juice; let sit for 10-15 minutes.
- Sprinkle cornstarch into the strawberry mixture to thicken as it bakes.
- In a separate bowl, mix flour, oats, sugar, and baking powder. Cut in the diced butter until the mixture resembles coarse crumbs.
- Add the egg and mix gently until just combined.
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
- Press two-thirds of the crumb mixture into the bottom of the dish to form the base.
- Spread the strawberry mixture evenly over the base, then sprinkle the remaining crumb mixture on top.
- Bake for 35-40 minutes until the top is golden brown. Allow to cool before slicing into squares.
Notes
For a twist, consider adding nuts or swapping strawberries for other berries. Ensure to drain frozen strawberries well to avoid excess moisture.
