Description

Deliciously sweet and tart strawberry filling sandwiched between buttery crumb topping, perfect for summer picnics and family gatherings.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour (or whole wheat flour)
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, chilled and diced
  • 1 large egg
  • 1 teaspoon baking powder
  • Zest of 1 lemon

Instructions

  1. Prepare the strawberries by rinsing, hulling, and chopping them into bite-sized pieces. Combine with sugar and lemon juice; let sit for 10-15 minutes.
  2. Sprinkle cornstarch into the strawberry mixture to thicken as it bakes.
  3. In a separate bowl, mix flour, oats, sugar, and baking powder. Cut in the diced butter until the mixture resembles coarse crumbs.
  4. Add the egg and mix gently until just combined.
  5. Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
  6. Press two-thirds of the crumb mixture into the bottom of the dish to form the base.
  7. Spread the strawberry mixture evenly over the base, then sprinkle the remaining crumb mixture on top.
  8. Bake for 35-40 minutes until the top is golden brown. Allow to cool before slicing into squares.

Notes

For a twist, consider adding nuts or swapping strawberries for other berries. Ensure to drain frozen strawberries well to avoid excess moisture.
