- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1 cup water
- 4 large eggs
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- Powdered sugar for dusting
Instructions
- In a medium saucepan, combine water and butter over medium heat until melted. Add flour all at once and stir until a ball forms.
- Remove from heat and let cool. Beat in eggs one at a time until smooth.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. Pipe small mounds of pastry about 2 inches apart.
- Bake for 20-25 minutes until golden brown and puffed. Poke holes to let steam escape and cool.
- In a bowl, mix strawberries with sugar and let sit. Whip cream with vanilla until soft peaks form.
- Slice cooled puffs, fill with strawberries and whipped cream, top with the other half, and dust with powdered sugar.
Notes
Assemble puffs just before serving to maintain crispness. For a lighter filling, consider using Greek yogurt.
