Delicate choux pastry filled with luscious whipped cream and fresh strawberries, capturing the essence of summer.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup water
  • 4 large eggs
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. In a medium saucepan, combine water and butter over medium heat until melted. Add flour all at once and stir until a ball forms.
  2. Remove from heat and let cool. Beat in eggs one at a time until smooth.
  3. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. Pipe small mounds of pastry about 2 inches apart.
  4. Bake for 20-25 minutes until golden brown and puffed. Poke holes to let steam escape and cool.
  5. In a bowl, mix strawberries with sugar and let sit. Whip cream with vanilla until soft peaks form.
  6. Slice cooled puffs, fill with strawberries and whipped cream, top with the other half, and dust with powdered sugar.

Notes

Assemble puffs just before serving to maintain crispness. For a lighter filling, consider using Greek yogurt.
