  • 1 cup fresh strawberries, hulled and chopped
  • 8 oz cream cheese, softened
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them with cooking spray.
  2. Prepare your strawberries: Wash, hull, and chop the strawberries into small pieces.
  3. Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
  4. Add in the eggs one at a time, then mix in the cream cheese until smooth.
  5. In another bowl, whisk together the flour, baking powder, and a pinch of salt.
  6. Gradually add the dry ingredients into the wet mixture, alternating with the milk. Mix until just combined.
  7. Fold in the strawberries gently to distribute throughout the batter.
  8. Scoop batter into muffin cups, filling them about three-quarters full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool in the tin for a few minutes before moving to a wire rack to cool completely.

Use ripe strawberries for the best flavor; can substitute with thawed frozen strawberries if needed.
