- 1 cup fresh strawberries, hulled and chopped
- 8 oz cream cheese, softened
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them with cooking spray.
- Prepare your strawberries: Wash, hull, and chop the strawberries into small pieces.
- Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
- Add in the eggs one at a time, then mix in the cream cheese until smooth.
- In another bowl, whisk together the flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients into the wet mixture, alternating with the milk. Mix until just combined.
- Fold in the strawberries gently to distribute throughout the batter.
- Scoop batter into muffin cups, filling them about three-quarters full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the tin for a few minutes before moving to a wire rack to cool completely.
Notes
Use ripe strawberries for the best flavor; can substitute with thawed frozen strawberries if needed.
