- 1 cup graham cracker crumbs

Instructions
- Wash strawberries thoroughly and pat dry.
- Remove green tops and chop strawberries into small pieces.
- In a medium bowl, combine chopped strawberries and softened cream cheese; blend until smooth.
- Add powdered sugar and vanilla extract, mixing until creamy.
- Chill the mixture in the refrigerator for about 60 minutes.
- Scoop out small amounts of chilled mixture and roll into bite-size balls.
- Roll each ball in graham cracker crumbs until fully coated.
- If using, melt white chocolate and dip each truffle until coated; place on parchment paper to set.
- For an extra touch, drizzle melted chocolate over cooled truffles.
