- 1 tsp vanilla extract
- 1 cup graham cracker crumbs

Instructions
- Prepare the Crust: Mix graham cracker crumbs with melted butter and sugar. Press the mixture into mini muffin tins. Bake at 350°F for 5-7 minutes until golden. Let cool.
- Make the Filling: Blend cream cheese, sugar, and vanilla extract until smooth. Whip heavy cream until soft peaks form. Fold whipped cream into the cream cheese mixture gently.
- Assemble the Bites: Spoon or pipe the filling into cooled crusts. Top with a fresh strawberry. Optionally glaze the strawberries with melted jelly.
- Chill: Refrigerate for at least 2 hours to set.
- Serve and Enjoy: Remove from muffin tin, garnish with mint if desired, and serve chilled.
