  • 8 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 2 cups fresh strawberries, sliced
  • 2 large eggs
  • 1 cup milk (whole or almond)
  • 3 tablespoons sweetener (honey, maple syrup, or brown sugar)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it.
  2. In a bowl, slice the strawberries and toss them with 1 tablespoon of sweetener; let sit to draw out juices.
  3. In another bowl, whisk together the cream cheese until smooth, then add Greek yogurt, eggs, milk, and remaining sweetener, blending until well combined.
  4. In a large bowl, combine the rolled oats and any spices, such as vanilla extract or cinnamon.
  5. Pour the wet ingredients into the dry ingredients and gently fold in the macerated strawberries.
  6. Transfer the mixture to the prepared baking dish, smoothing the top, and sprinkle more strawberries on top if desired.
  7. Bake for 30-40 minutes until the top is golden and a toothpick comes out clean.
  8. Let cool for at least 10 minutes before serving.
