- 2 cups rolled oats
- 8 oz cream cheese, softened
- 1 cup Greek yogurt
- 2 cups fresh strawberries, sliced
- 2 large eggs
- 1 cup milk (whole or almond)
- 3 tablespoons sweetener (honey, maple syrup, or brown sugar)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it.
- In a bowl, slice the strawberries and toss them with 1 tablespoon of sweetener; let sit to draw out juices.
- In another bowl, whisk together the cream cheese until smooth, then add Greek yogurt, eggs, milk, and remaining sweetener, blending until well combined.
- In a large bowl, combine the rolled oats and any spices, such as vanilla extract or cinnamon.
- Pour the wet ingredients into the dry ingredients and gently fold in the macerated strawberries.
- Transfer the mixture to the prepared baking dish, smoothing the top, and sprinkle more strawberries on top if desired.
- Bake for 30-40 minutes until the top is golden and a toothpick comes out clean.
- Let cool for at least 10 minutes before serving.
Notes
For lighter options, substitute cream cheese with ricotta or cottage cheese. Use non-dairy alternatives for yogurt and milk as needed.
