A delightful cheesecake with swirls of fresh strawberry puree, combining creamy and fruity flavors for a perfect dessert.

- 16 oz cream cheese
- 3/4 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries, pureed
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 325°F (165°C).
- Crush graham crackers, mix with melted butter and sugar, and press into the bottom of a springform pan. Bake for 10 minutes and cool.
- In a bowl, beat cream cheese until smooth. Gradually add sugar, then blend in sour cream and vanilla extract. Add eggs one at a time, mixing until combined.
- Puree strawberries and strain to remove seeds. Optionally sweeten the puree with more sugar.
- Pour half of the cheesecake batter into the crust, drop spoonfuls of strawberry puree, and swirl gently. Add remaining batter and repeat with strawberry puree.
- Bake for 55-60 minutes until edges are set but the center jiggles slightly. Turn off the oven, crack the door, and cool for 1 hour. Refrigerate for at least 4 hours or overnight.
- Remove from the springform pan, slice, and garnish with extra strawberries and whipped cream if desired.
Notes
For best results, keep ingredients at room temperature before mixing to ensure a smooth texture.
