Description

A delightful cheesecake with swirls of fresh strawberry puree, combining creamy and fruity flavors for a perfect dessert.


Ingredients

  • 16 oz cream cheese
  • 3/4 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, pureed
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Crush graham crackers, mix with melted butter and sugar, and press into the bottom of a springform pan. Bake for 10 minutes and cool.
  3. In a bowl, beat cream cheese until smooth. Gradually add sugar, then blend in sour cream and vanilla extract. Add eggs one at a time, mixing until combined.
  4. Puree strawberries and strain to remove seeds. Optionally sweeten the puree with more sugar.
  5. Pour half of the cheesecake batter into the crust, drop spoonfuls of strawberry puree, and swirl gently. Add remaining batter and repeat with strawberry puree.
  6. Bake for 55-60 minutes until edges are set but the center jiggles slightly. Turn off the oven, crack the door, and cool for 1 hour. Refrigerate for at least 4 hours or overnight.
  7. Remove from the springform pan, slice, and garnish with extra strawberries and whipped cream if desired.

Notes

For best results, keep ingredients at room temperature before mixing to ensure a smooth texture.
