Description

A delightful and whimsical Funfetti Cake perfect for Halloween gatherings, layered with rich frosting and decorated with spooky treats.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk
  • 1 cup Halloween-themed sprinkles
  • Food coloring (optional)
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 4 tablespoons heavy cream or milk (for frosting)
  • Food coloring (for decorating frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, combine your flour, baking powder, baking soda, and salt. Whisk together until blended.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 5 minutes. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the creamed mixture, alternating with buttermilk, until just combined. Fold in your Halloween sprinkles and add food coloring if desired.
  5. Divide the batter evenly between your prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Once baked, cool the cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until fully combined. Pour in the cream and vanilla, and beat until smooth and fluffy. Add food coloring for decoration if desired.
  8. Assemble the cake by layering the frosting between the cooled cakes and spreading the remaining frosting on the top and sides. Decorate with extra sprinkles, candy ghosts, or whatever spooky bits you have on hand.
  9. Slice and enjoy your spooky creation!

Notes

Chill the cakes for an hour before frosting to prevent crumbling. Consider using a crumb coat for a cleaner finish.
