Description
A comforting dish of manicotti pasta filled with a rich mixture of spinach, ricotta, and Parmesan, all baked in marinara sauce.

- 12 manicotti pasta shells
- 15 oz ricotta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 tbsp olive oil
- 1 tsp fresh basil, chopped
- 1 tsp fresh oregano, chopped
- Salt and pepper to taste
Instructions
- Sauté minced garlic and diced onion in olive oil until fragrant. Add spinach and cook until wilted.
- In a bowl, combine spinach mixture with ricotta, Parmesan, salt, pepper, and herbs.
- Fill each manicotti shell with the cheese-spinach mixture.
- Spread a layer of marinara sauce in a baking dish and arrange the stuffed manicotti in a single layer. Cover with remaining marinara.
- Preheat the oven to 350°F (175°C). Cover with foil and bake for 25 minutes, removing foil for the last 10 minutes.
- Let cool slightly before serving. Garnish with more Parmesan and herbs.
Notes
For a healthier option, use whole wheat manicotti or swap ricotta for cottage cheese. Leftovers can be stored in the fridge for up to three days or frozen before baking.
