Spinach Ricotta Stuffed Manicotti

Description

A comforting dish of manicotti pasta filled with a rich mixture of spinach, ricotta, and Parmesan, all baked in marinara sauce.


Ingredients

  • 12 manicotti pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 tsp fresh basil, chopped
  • 1 tsp fresh oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Sauté minced garlic and diced onion in olive oil until fragrant. Add spinach and cook until wilted.
  2. In a bowl, combine spinach mixture with ricotta, Parmesan, salt, pepper, and herbs.
  3. Fill each manicotti shell with the cheese-spinach mixture.
  4. Spread a layer of marinara sauce in a baking dish and arrange the stuffed manicotti in a single layer. Cover with remaining marinara.
  5. Preheat the oven to 350°F (175°C). Cover with foil and bake for 25 minutes, removing foil for the last 10 minutes.
  6. Let cool slightly before serving. Garnish with more Parmesan and herbs.

Notes

For a healthier option, use whole wheat manicotti or swap ricotta for cottage cheese. Leftovers can be stored in the fridge for up to three days or frozen before baking.
