Instructions

  1. Wash the spinach thoroughly and chop it coarsely. Crumble the feta cheese and set it aside.
  2. In a non-stick skillet, heat butter or olive oil over medium heat. Add onions and sauté until translucent. Toss in the spinach and cook until wilted.
  3. In a bowl, crack the eggs and whisk them until light and frothy. Add a pinch of salt and pepper.
  4. Pour the whisked eggs into the skillet with the spinach, gently stirring to ensure even cooking. Lower the heat to medium-low.
  5. Sprinkle the crumbled feta evenly across the omelet as the eggs start to set. Optionally, fold in fresh herbs.
  6. Cook undisturbed for a few minutes until the edges are firm but the center is slightly runny.
  7. Carefully fold the omelet in half using a spatula and cook for another minute.
