- 4 large eggs
- 2 cups fresh spinach, coarsely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup onion or shallots, diced (optional)
- 1 tablespoon butter or olive oil
- Salt and pepper to taste
Instructions
- Wash the spinach thoroughly and chop it coarsely. Crumble the feta cheese and set it aside.
- In a non-stick skillet, heat butter or olive oil over medium heat. Add onions and sauté until translucent. Toss in the spinach and cook until wilted.
- In a bowl, crack the eggs and whisk them until light and frothy. Add a pinch of salt and pepper.
- Pour the whisked eggs into the skillet with the spinach, gently stirring to ensure even cooking. Lower the heat to medium-low.
- Sprinkle the crumbled feta evenly across the omelet as the eggs start to set. Optionally, fold in fresh herbs.
- Cook undisturbed for a few minutes until the edges are firm but the center is slightly runny.
- Carefully fold the omelet in half using a spatula and cook for another minute.
- Slide the omelet onto a plate, garnishing with extra feta or herbs. Enjoy with toasted whole-grain bread.
Notes
Feel free to swap feta with goat cheese or cottage cheese for different flavors. Adding herbs like dill or chives enhances the taste.
