- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup dried cranberries
- 4 oz cream cheese, softened
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tbsp olive oil or butter
Instructions
- In a skillet over medium heat, add olive oil or butter. Sauté minced garlic for about a minute until fragrant.
- Toss in fresh spinach and let it wilt, stirring frequently. Add dried cranberries and a pinch of salt, cooking for another minute before removing from heat.
- In a bowl, combine the sautéed spinach mix with softened cream cheese. Stir until combined and creamy.
- Pat the chicken breasts dry. Using a sharp knife, cut a pocket into each breast.
- Fill each pocket generously with the spinach and cranberry mixture. Secure with toothpicks.
- In the same skillet, add oil or butter over medium-high heat. Sear stuffed chicken on both sides until golden brown (about 4-5 minutes per side).
- Transfer to a preheated oven at 375°F (190°C). Bake for 20-25 minutes until the chicken is cooked through (internal temperature 165°F or 75°C).
- Allow the chicken to rest for a few minutes before slicing and serve with sides.
