  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup dried cranberries
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter

Instructions

  1. In a skillet over medium heat, add olive oil or butter. Sauté minced garlic for about a minute until fragrant.
  2. Toss in fresh spinach and let it wilt, stirring frequently. Add dried cranberries and a pinch of salt, cooking for another minute before removing from heat.
  3. In a bowl, combine the sautéed spinach mix with softened cream cheese. Stir until combined and creamy.
  4. Pat the chicken breasts dry. Using a sharp knife, cut a pocket into each breast.
  5. Fill each pocket generously with the spinach and cranberry mixture. Secure with toothpicks.
  6. In the same skillet, add oil or butter over medium-high heat. Sear stuffed chicken on both sides until golden brown (about 4-5 minutes per side).
  7. Transfer to a preheated oven at 375°F (190°C). Bake for 20-25 minutes until the chicken is cooked through (internal temperature 165°F or 75°C).
  8. Allow the chicken to rest for a few minutes before slicing and serve with sides.
