Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 cup dried cranberries
  • 4 oz cream cheese (or Greek yogurt for a lighter option)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/4 cup parsley, chopped
  • 1/2 cup feta or mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add the onions and garlic. Cook until fragrant and translucent.
  3. Add spinach and sauté until wilted. Mix in cranberries, cream cheese, and herbs, then remove from heat.
  4. Make a pocket in each chicken breast and stuff generously with the spinach mixture. Secure with toothpicks if necessary.
  5. Season the outsides of the chicken with salt, pepper, and additional herbs.
  6. Place stuffed chicken breasts on a baking sheet and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C). Broil for a few minutes for a golden top.
  7. Let the chicken rest for a few minutes before serving.

Notes

Feel free to customize the filling with different ingredients like nuts or other vegetables. Serve with a fresh salad or roasted potatoes.
