- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach (or frozen, thawed and drained)
- 1 cup dried cranberries
- 4 oz cream cheese (or Greek yogurt for a lighter option)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tsp thyme
- 1 tsp rosemary
- 1/4 cup parsley, chopped
- 1/2 cup feta or mozzarella cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add the onions and garlic. Cook until fragrant and translucent.
- Add spinach and sauté until wilted. Mix in cranberries, cream cheese, and herbs, then remove from heat.
- Make a pocket in each chicken breast and stuff generously with the spinach mixture. Secure with toothpicks if necessary.
- Season the outsides of the chicken with salt, pepper, and additional herbs.
- Place stuffed chicken breasts on a baking sheet and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C). Broil for a few minutes for a golden top.
- Let the chicken rest for a few minutes before serving.
Notes
Feel free to customize the filling with different ingredients like nuts or other vegetables. Serve with a fresh salad or roasted potatoes.
