Ingredients

  • 3/4 cup Cocoa Powder
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Unsalted Butter, melted
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 tsp Espresso Powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, melt the unsalted butter, then whisk in the granulated and brown sugar until combined. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, sift together the all-purpose flour, cocoa powder, espresso powder, and baking soda.
  4. Gradually add the dry mixture to the wet ingredients, mixing until a cohesive dough forms. Fold in the chocolate chips last.
  5. Using a tablespoon or cookie scoop, drop mounds of dough onto the prepared baking sheet, shaping them into an oval form to resemble spiders.
  6. Bake for 10-12 minutes. They should look slightly soft but will firm up while cooling.
  7. Once slightly cool, melt additional chocolate to create spider legs on top of the cookies.
  8. Allow the cookies to cool completely on wire racks before enjoying.

Notes

Using room temperature ingredients ensures a smooth batter. Chill the dough for thicker cookies if desired.
